Peanut Butter Bacon Bison Cheeseburger

Ingredients
  

  • 1 lb. ground bison
  • ½ lb. bacon sliced thick
  • 1 TBSP brown sugar
  • 1 cup extra chunky peanut butter
  • ½ cup Sax Family honey
  • ½ TBSP Blind Beelzebub Rub
  • Kosher salt to taste
  • Black pepper to taste
  • Garlic powder to taste
  • 4 slices sharp cheddar cheese
  • 1 heirloom tomato sliced thick
  • Pickled jalapeno peppers
  • Japanese mayonnaise
  • 4 potato buns

Instructions
 

  • Heat the Traeger or another grill to 350 ºF with the lid closed for 15 minutes.
  • Sprinkle bacon with brown sugar. Grill the bacon for 10 minutes, flip, and cook for 10 more minutes, or until it reaches the desired doneness. Remove bacon.
  • Crank the grill temp up to 450ºF
  • Whisk together the chunky peanut butter, honey, and Blind Beelzebub Rub.
  • Pat the ground bison into roughly 6-ounce patties. Season liberally with kosher salt, black pepper, and garlic powder. Place burgers into the grill.
  • Grill burgers for 4 minutes, flip, and grill for 3 more minutes. Add cheese and grill until melted.
  • Remove from grill. Spread the spicy peanut butter mixture on the top bun halves and a smear of Japanese mayonnaise on the bottom halves.
  • Assemble the burger with bacon, jalapenos, and heirloom tomato.
  • Enjoy a burger that would make Elvis proud.
