Heat the Traeger or another grill to 350 ºF with the lid closed for 15 minutes.
Sprinkle bacon with brown sugar. Grill the bacon for 10 minutes, flip, and cook for 10 more minutes, or until it reaches the desired doneness. Remove bacon.
Crank the grill temp up to 450ºF
Whisk together the chunky peanut butter, honey, and Blind Beelzebub Rub.
Pat the ground bison into roughly 6-ounce patties. Season liberally with kosher salt, black pepper, and garlic powder. Place burgers into the grill.
Grill burgers for 4 minutes, flip, and grill for 3 more minutes. Add cheese and grill until melted.
Remove from grill. Spread the spicy peanut butter mixture on the top bun halves and a smear of Japanese mayonnaise on the bottom halves.
Assemble the burger with bacon, jalapenos, and heirloom tomato.
