In a large Dutch oven over medium-high heat, cook ground beef and stew meat until evenly browned. Season to taste with salt and pepper.
Add to the cooked beef, onion, peppers, tomatoes, and Cold Smoke Scotch Ale. Season with chili powder, cumin, and soy sauce. Stir to distribute ingredients evenly.
Simmer for 3 hours.
Add the crushed tortilla chips and corn kernels.
Serve with sharp cheddar cheese, sour cream, cilantro…and more hot sauce!
