Double Beef Beer Chili

Ingredients
  

  • 1 lb. lean ground beef
  • 1 lb. beef stew meat
  • 1 white onion chopped
  • 2 poblano chili peppers chopped
  • 3 serrano chili peppers chopped
  • 1 habanero chili pepper chopped
  • 2 jalapeno chili peppers chopped
  • 1 28-ounce can of Mexican-style stewed tomatoes
  • ½ can dark ale Scotch Ale
  • 2 TBSP hot chili powder
  • 1 TBSP ground cumin
  • 1 dash of soy sauce
  • 1 14-ounce can of corn kernels
  • Handful of tortilla chips crushed
  • salt and pepper to taste

Instructions
 

  • In a large Dutch oven over medium-high heat, cook ground beef and stew meat until evenly browned. Season to taste with salt and pepper.
  • Add to the cooked beef, onion, peppers, tomatoes, and Cold Smoke Scotch Ale. Season with chili powder, cumin, and soy sauce. Stir to distribute ingredients evenly.
  • Simmer for 3 hours.
  • Add the crushed tortilla chips and corn kernels.
  • Serve with sharp cheddar cheese, sour cream, cilantro…and more hot sauce!
