Smoked Beef Short Rib Nachos With Smoked Poblano Queso

Ingredients
  

For the Nachos

  • 4 Smoked and Braised Beef Short Ribs diced
  • Smoked Poblano Queso
  • Tortilla chips
  • Several lime wedges
  • Cilantro on top
  • Sour cream on the side
  • Hot salsa on the side

For the Smoked Poblano Queso

  • 2 poblanos smoked until soft and diced
  • 1 cup half and half
  • 8 oz. Mexican cheese blend shredded

Instructions
 

For the Nachos

  • Start with a layer of tortilla chips, then Smoked Poblano Queso and the diced Smoked and Braised Beef Short Ribs, and finally a few cilantro leaves.
  • Serve with lime wedges, salsa, and sour cream.

For the Smoked Poblano Queso

  • Bring the half and half to a simmer over medium-high heat stirring constantly, stirring constantly, then remove from heat.
  • Immediately stir in the poblanos and cheese, and return to low heat and stir to fully melt the cheese.
