Instructions
For the Nachos
Start with a layer of tortilla chips, then Smoked Poblano Queso and the diced Smoked and Braised Beef Short Ribs, and finally a few cilantro leaves.
Serve with lime wedges, salsa, and sour cream.
For the Smoked Poblano Queso
Bring the half and half to a simmer over medium-high heat stirring constantly, stirring constantly, then remove from heat.
Immediately stir in the poblanos and cheese, and return to low heat and stir to fully melt the cheese.
