Ingredients
For the Pork Chops

thick-cut bone-in pork chops
Headwaters BBQ Ringing Rock Rib Rub
For the Five Spice Pears and Peppers Chutney

freshly picked small pears
diced

ripe serrano chilis
sliced thin

apple cider vinegar

cup
brown sugar
1/2
tsp
five spice
1/2
tsp
chili powder
1/2
tsp
cinnamon
Kosher salt
to taste
Black pepper
to taste
Instructions
For the Pork Chops
Thoroughly coat each pork chop with Headwaters BBQ Ringing Rock Rib Rub
Place into 135ºF sous vide for 2 hours.
Heat your grill until it is sup-hot. Quickly sear both sides of each pork chop.
Serve the pork chops with the pear chutney spooned over the top.
For the Five Spice Pears and Peppers Chutney
Combine the chutney ingredients in a small saucepan over medium heat.
Simmer, stirring occasionally until the pears are nice and soft and the sauce coats the pears.
