Season the New York strip with kosher salt and cracked black pepper
Place into a freezer bag, making sure to remove as much air as possible
Place into hillbilly sous vide at 135°F
The steak can remain in the sous vide for 1 to 4 hours
Mix mayonnaise and Sriracha
Remove from the water bath and freezer bag
Apply a thin coat of the Sriracha mayonnaise to all surfaces of the steak
Heat a flat top high heat
Sear the steak on all sides
Let the steak rest for 5 minutes
Slice and serve
