Preheat oven to 375ยบ F. Line a baking sheet with parchment paper.
In a large mixing bowl, cream together butter and the sugars.
Add the flour, baking soda, kosher salt, and baking powder. Blend well.
Beat in eggs and vanilla until fluffy.
Throw in the pecan pieces.
Roll half of the dough into 2 TBSP balls, and shape them into 3-inch disks about 1/4 inch thick. Place them evenly spaced on the baking sheet.
Spoon 1/2 TBSP of Sticky Flavored Honey onto each cookie disk.
Roll the remaining half of the dough into 2 TBSP balls, shape them into 3-inch disks about 1/4 inch thick. Place them on top the previously prepared dough disks and form them into your basic cookie shape.
Bake in preheated oven for approximately 10 minutes. Take them out when they are just BARELY starting to turn brown.
Let them sit on the baking pan for 2 minutes before removing them to the cooling rack.
Notes
Do not over bake
When you remove the cookies from the oven they will still look doughy. Please, I beg you, do NOT over bake!
