Heat a large stockpot over medium-high heat. Add the chorizo and sauté for 3 minutes, stirring occasionally. Add the ground beef and sauté until browned.
Add the onion, poblano pepper, and jalapeño to the pot and sauté until softened. Add garlic and sauté for 2 more minutes, stirring occasionally.
Add the beer to the pot, and use a wooden spoon to gently scrape up any browned bits that are stuck to the bottom of the pot.
Add the beef stock, tomatoes, beans, green chiles, chipotle chili in adobo, chili powder, and cumin, and stir to combine. Bring to a simmer and reduce heat to low and continue to simmer the chili for 1 hour.
Taste and season with salt and pepper, to your taste…or if you’re Vida, add a lot of salt.
