The Quickest Ultimate Chili

Ingredients
  

  • ½ lb. chorizo sausage
  • 1 lb. ground beef
  • 1 medium yellow onion finely diced
  • 1 poblano pepper cored and finely diced
  • 1 jalapeño cored and finely diced
  • 4 cloves garlic pressed
  • 12 oz. lager beer
  • cups beef stock
  • 2 15-oz cans of fire-roasted diced tomatoes
  • 2 15-oz cans of beans, rinsed and drained (dealer’s choice)
  • 1 4-ounce can of diced green chilis
  • 1 chipotle chili in adobo sauce diced (plus 2 tsp of the adobo sauce)
  • 1 TBSP chili powder
  • 1 tsp ground cumin
  • Sea salt
  • Black pepper
  • Topping suggestions: chopped fresh cilantro diced onions, shredded cheese, sour cream, lime wedges, just about anything you like.

Instructions
 

  • Heat a large stockpot over medium-high heat. Add the chorizo and sauté for 3 minutes, stirring occasionally. Add the ground beef and sauté until browned.
  • Add the onion, poblano pepper, and jalapeño to the pot and sauté until softened. Add garlic and sauté for 2 more minutes, stirring occasionally.
  • Add the beer to the pot, and use a wooden spoon to gently scrape up any browned bits that are stuck to the bottom of the pot.
  • Add the beef stock, tomatoes, beans, green chiles, chipotle chili in adobo, chili powder, and cumin, and stir to combine. Bring to a simmer and reduce heat to low and continue to simmer the chili for 1 hour.
  • Taste and season with salt and pepper, to your taste…or if you’re Vida, add a lot of salt.
  • Piled high with all of your favorite toppings and enjoy immediately,
