Chili, short for Chili con carne (meat in Spanish) is a tasty stew of beef, tomatoes, beans, and seasonings cooked in one pot. Although the original recipe came out of northern Mexico/Southern Texas, it has since evolved many times over (read more here) enough to drum up passionate disputes among self-appointed chili aficionados. If parting with tradition is your milieu, and your kitchen is more of an experimental laboratory, by all means, exercise your creativity because after all, you’d be the one eating that entire pot of chili meant for a family of 8. Step up your chili game with the following simple tweaks, use canned beans instead of dry beans since they are already tender and brined. Use fresh ground beef, and be sure to cook low and slow. Take it up another notch to create the Ultimate chili with

  • Chorizo sausage, the highly seasoned ground pork that renders chili a paprika-and-garlic-rich fat.
  • Use Poblano and Jalapeno peppers
  • For a spicier and more potent chili flavor, instead of mixing in the chili spice with other ingredients, “bloom” the aromatics by sauteing them in a bit of butter or oil first.
  • Last, but not least stir in a little beer to add a robust character and deeper flavors to the chili

The Quickest Ultimate Chili

Ingredients
  

  • ½ lb. chorizo sausage
  • 1 lb. ground beef
  • 1 medium yellow onion finely diced
  • 1 poblano pepper cored and finely diced
  • 1 jalapeño cored and finely diced
  • 4 cloves garlic pressed
  • 12 oz. lager beer
  • cups beef stock
  • 2 15-oz cans of fire-roasted diced tomatoes
  • 2 15-oz cans of beans, rinsed and drained (dealer’s choice)
  • 1 4-ounce can of diced green chilis
  • 1 chipotle chili in adobo sauce diced (plus 2 tsp of the adobo sauce)
  • 1 TBSP chili powder
  • 1 tsp ground cumin
  • Sea salt
  • Black pepper
  • Topping suggestions: chopped fresh cilantro diced onions, shredded cheese, sour cream, lime wedges, just about anything you like.

Instructions
 

  • Heat a large stockpot over medium-high heat. Add the chorizo and sauté for 3 minutes, stirring occasionally. Add the ground beef and sauté until browned.
  • Add the onion, poblano pepper, and jalapeño to the pot and sauté until softened. Add garlic and sauté for 2 more minutes, stirring occasionally.
  • Add the beer to the pot, and use a wooden spoon to gently scrape up any browned bits that are stuck to the bottom of the pot.
  • Add the beef stock, tomatoes, beans, green chiles, chipotle chili in adobo, chili powder, and cumin, and stir to combine. Bring to a simmer and reduce heat to low and continue to simmer the chili for 1 hour.
  • Taste and season with salt and pepper, to your taste…or if you’re Vida, add a lot of salt.
  • Piled high with all of your favorite toppings and enjoy immediately,
