Kolache (Kolache plural for Kolach, pronounced ko-LAH-chee) are Eastern European pastries introduced to rural Texas in the 1870s by Czech immigrants. They are made with yeast-leavened dough, filled with jam or fruit, and taste rich and sweet. Although its flavors and fillings evolved over time to include savory ingredients, not all Texans approve because “If it ain’t sweet, it ain’t Kolache”. So if your pastry is filled with spinach, bacon, cheese, and sausage be sure to call it something else. Maybe try Klobasnik.
Happy to inform you that fruit-filled Kolache maintained its popularity in Texas, the Kolache Capital of the USA, and could be found in a few other states where Czech immigrants settled. In fact, Prague, Oklahoma hosts the largest Kolache festival in the world. Prague, Nebraska holds the record for the world’s largest Kolache. Basically, leave it to America to supersize it.
