Sándwich Cubano – a pressed ham and cheese sandwich – or “Cubano” for short is pronounced “cooh-wano” with the hard sound of the letter B slurring into the second syllable.

Back in the 1800s (and early 1900s), when travel between Cuba and Florida was easy, Havana’s cigar factory and sugar mill workers entered Key West, Florida along with Cuban exiles and ex-pats, and brought with them their common lunch sandwich, the Cubano. Today these sandwiches can be found in loncherias (street food vendors) in Tampa and Miami, as well as our hacienda in Montana because trying new things is the cornerstone of a proper culinary adventure.

Making a Cubano is a little more than just slapping a ham sandwich together and tossing it in a panini press. Ingredients
  

  • 2 bone-in pork chops
  • 2 TBSP Salsa Lizano
  • 2 ciabatta rolls sliced in half
  • Vi’s Dippin’ Mustard Sauce to taste
  • 4 dill pickle sandwich slices
  • 4 slices Swiss cheese
  • 4 slices smoked ham

Instructions
 

  • Coat the pork chops with Salsa Lizano and allow them to marinate (refrigerated) for 4 hours.
  • When ready to smoke, heat your smoker to 225℉.
  • Place pork chops and smoke until internal temperature reaches 145℉, then removed them from the smoker and slice thin.
  • Heat your grill to 350℉.
  • Build the Cubano sandwiches with layers of Vi’s Dippin’ Mustard Sauce, Swiss cheese, smoked pork, ham, and dill pickle slices.
  • Place the sandwiches into the grill and press them hard. Grill each side until the bread starts to crisp. Remove from the grill.
  • Slice on the diagonal and serve with extra Vi’s Dippin’ Mustard Sauce.
