Kolache (Kolache plural for Kolach, pronounced ko-LAH-chee) are Eastern European pastries introduced to rural Texas in the 1870s by Czech immigrants. They are made with yeast-leavened dough, filled with jam or fruit, and taste rich and sweet. Although its flavors and fillings evolved over time to include savory ingredients, not all Texans approve because “If it ain’t sweet, it ain’t Kolache”. So if your pastry is filled with spinach, bacon, cheese, and sausage be sure to call it something else. Maybe try Klobasnik.

Happy to inform you that fruit-filled Kolache maintained its popularity in Texas, the Kolache Capital of the USA, and could be found in a few other states where Czech immigrants settled. In fact, Prague, Oklahoma hosts the largest Kolache festival in the world. Prague, Nebraska holds the record for the world’s largest Kolache. Basically, leave it to America to supersize it. That’s our specialty.

Ingredients
  

  • 1/2 cup butter softened
  • 3 oz. cream cheese
  • 1 1/4 cups all-purpose flour
  • 1/3 cup Aspen Grove Farm jam
  • 1/4 cup confectioners sugar

Instructions
 

  • In a mixer, combine the butter and cream cheese; beat until fluffy.
  • Add flour to the mixture and blend well.
  • Shape the dough into a disk and wrap it in plastic wrap. Refrigerate for 20 minutes.
  • Heat the oven to 350ºF. Line a baking sheet with parchment paper.
  • Roll dough to 1/8-inch thickness on a lightly floured surface. Cut into 2-inch squares. Place them about 1 1/2 inches apart on the prepared baking sheet.
  • Spoon 1/2 teaspoon Aspen Grove Farm jam onto the center of each cookie. Fold opposite sides together, slightly overlapping edges.
  • Bake at 375ºF for 15 minutes.
  • Remove and cool. Lightly sift confectioners’ sugar over the cooled cookies.
