Never underestimate the satisfaction and comfort of a well-made taco and a pint of beer, no matter how cheap or expensive.

If cooking the succulent corned beef brisket you recently mastered with us was too much for your family to tackle in one sitting, use the extra meat in the Reuben sandwich or deliver that perfectly brined and flavorful beef directly to your stomach wrapped in a taco. Perhaps nontraditional, but the food that has come to represent Mexico actually has no archetype.

Mexican people just fashioned the cooking of their indigenous people and European settlers into different taco recipes much the same way we are about to fashion a Reuben into a taco. The original tangy, sweet, salty, and savory Reuben recipe is a true story of America in one plate, the melting pot of immigrant Irish, Jewish, German, Swiss, and Russians that immigrated to America, so it’s about time we added the focal point of Mexican cuisine into our cultural mix. So let’s taco about tacos. (sorry, I had to.)

Tacos are budget-friendly and allow for a lot of personalization. Just open up your tortilla, add your brisket top with fillings, hold it with your peace fingers and your thumb, and bite into it from the sides. Be sure to substitute the salsa with the following recipe so that your smoked and beer-braised brisket glimmers and shine in spades.

Smoked and Scotch Ale-Braised Brisket Tacos with Pickled Cabbage Slaw

Ingredients
  

For the Tacos

  • ½ lb. Smoked and Scotch Ale-braised Corned Beef sliced thin
  • 4 wheat tortillas grilled

For the Pickled Cabbage Slaw

  • 2 cups cabbage shredded
  • ½ red onion thinly sliced
  • cup lemon juice
  • 1 cup apple cider vinegar
  • ½ cup mayonnaise
  • 2 TBSP kosher salt
  • cups brown sugar
  • 1 tsp black peppercorn
  • Hot sauce to taste

Instructions
 

For the Tacos

  • To assemble a taco, fill the tortillas with corned beef and top with pickled cabbage slaw. Easy Peasy.

For the Pickled Cabbage Slaw

  • In a saucepan over medium heat, add the lemon juice, apple cider vinegar, salt, brown sugar, and peppercorns in a pot.
  • Bring to a simmer just until the salt and sugar dissolve, remove from heat. Allow to it cool to room temperature.
  • In a large bowl, add the cabbage, onion, mayonnaise, and hot sauce. Pour the cooled pickling liquid over this, and refrigerate for one hour.
