Hasselback potatoes are the fun and slick-looking creation of an aspiring Swedish chef in 1953, who at the time, worked in a restaurant called Hasselbacken. Sorry to disappoint if you thought David Hasselhoff made them on his time off sauntering the beaches with equally beautiful babes.
These loaded potatoes are easy on the eyes, easy to prepare, and baking them isn’t as long as Mitch Hedberg assumes. Enjoy.
Smoky Bacon Chive Hasselback Potatoes

Ingredients
- 2 russet potatoes
- ½ lb. bacon cut into 2-inch slices
- For the Smoky Butter Sauce
- 4 TBSP unsalted butter melted
- 1 TBSP garlic pressed
- 1 TBSP rub of your choice
For the Chive Cheese Sauce
- ¾ cup milk
- 7.5 oz chive and onion cream cheese
- ½ tsp kosher salt
- ¼ tsp fresh ground black pepper
- 1 TBSP dried chives
Instructions
- Preheat oven to 425°F.
- Make crosswise cuts in each potato, about ⅛ inch apart, stopping about ¼ inch from the bottom (hint: use chopsticks as a stopper).
- Microwave your potatoes for 5 minutes per potato.
- Mix together melted butter, garlic, and rub.
- Insert a slice of bacon into the slot in the sliced potatoes.
- Brush each potato with Smoky Butter Sauce.
- Bake until the outsides are browned and crisp, about 40 minutes.
- In a saucepan over medium heat, combine the milk, chive, and onion cream cheese, kosher salt, and black pepper. Whisk until smooth.
- Add the dried chives to the cream cheese sauce.
- Spoon the Chive Cheese Sauce over the crispy Hasselback potatoes.
