Sous Vide Pork Chops With Five Spice Pears And Peppers Chutney

Ingredients
  

For the Pork Chops

  • 2 thick-cut bone-in pork chops
  • Headwaters BBQ Ringing Rock Rib Rub

For the Five Spice Pears and Peppers Chutney

  • 6 freshly picked small pears diced
  • 2 ripe serrano chilis sliced thin
  • 1/3 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 1/2 tsp five spice
  • 1/2 tsp chili powder
  • 1/2 tsp cinnamon
  • Kosher salt to taste
  • Black pepper to taste

Instructions
 

For the Pork Chops

  • Thoroughly coat each pork chop with Headwaters BBQ Ringing Rock Rib Rub
  • Place into 135ºF sous vide for 2 hours.
  • Heat your grill until it is sup-hot. Quickly sear both sides of each pork chop.
  • Serve the pork chops with the pear chutney spooned over the top.

For the Five Spice Pears and Peppers Chutney

  • Combine the chutney ingredients in a small saucepan over medium heat.
  • Simmer, stirring occasionally until the pears are nice and soft and the sauce coats the pears.
