Cheese logs are retro appetizers that go back to the ’70s and never lost their popularity since because as you probably already know, there is a solid tasty reason they were able to carve out their names in the hors d’oeuvre hall of fame.

Cheese logs or cheese balls are made with cream cheese, cheddar, blue, Gouda, feta, or Brie, served with pretzels, crostini, crackers, vegetable sticks, pear, or apple slices, and, my personal favorite jams! They are the center stage of any spread, staged artistically on nice cheese or charcuterie boards for the eyes to drool first before diving right into this cheesy, creamy, dreamy appetizer. This reminds me, we have a kicka$$ jalapeño fruit jam called Sweet Wildfire from right here in the Bitterroot Valley for the very purpose of adding a bit of sweet-savory to your charcuterie boards and snack. 

Today’s decadent recipe is a cheese log we all absolutely, positively, and totally love but even more satisfying than you can ever imagine. Is such a thing even possible?

Hell yeah! Wrap that cheese log around a bratwurst to create an even more savory and satisfying bite that is thoroughly scrumptious and one of a kind because this is the first recipe of its kind.

As you will soon find out, the sharpness of the grated cheddar in this recipe is a nice contrast to the savory umami cream cheese bacon and brats that ultimately leads to a cheesy, creamy, and dreamy appetizer. Eat as is or cut up for a bite-sized finger food appetizer. We guarantee you will have no leftovers.

Smoked Bacon Bratwurst Cheese Logs

Ingredients
  

  • 3 beer bratwurst removed from the casings
  • 4 slices thick-cut bacon
  • 1 TBSP Arthur Wayne Habanero Hot Sauce
  • 1 cup panko bread crumbs
  • 4 oz. chive and onion cream cheese
  • 1/2 cup sharp cheddar cheese grated
  • 1/2 cup asiago cheese grated
  • 1/4 cup jalapeño finely diced
  • 1/2 TBSP Italian seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp of your favorite BBQ rub

Instructions
 

  • Heat smoker to 250ºF.
  • Mix bratwurst, Arthur Wayne Habanero Hot Sauce, panko bread crumbs, cheeses, cream cheese, jalapeño, Italian seasoning, onion powder, and garlic powder in a large bowl until well incorporated.
  • Portion the mixture into 4 and form sausage-shaped logs.
  • Wrap each log with a slice of bacon.
  • Place sausage and cheese logs into the smoker and smoke for 75 minutes.
  • Serve with Dijon mustard.
