  1. In a food-grade large bucket, combine the apple cider, water, hot sauce, kosher salt, garlic powder, chili powder, black pepper, cayenne pepper, and brown sugar.
  2. Dunk the turkey into the brine and store in a refrigerator. Soak turkey for 2 days before smoking or roasting.
