Tomato-Simmered Lemon & Oregano Bison Meatballs

Ingredients
- 1 lb. Bitterroot Bison ground meat
- ½ cup ricotta cheese
- 2 TBSP parmesan cheese, grated
- 1 cup panko bread crumbs
- 1 small onion, grated
- 3 cloves garlic, minced
- 1 large egg
- 2 TBSP dried oregano
- 1 tsp lemon zest
- 1 tsp kosher salt
- Ground black pepper
- 4 cups chunky marinara sauce
- 1 cup beef broth
- 2 tsp Worcestershire sauce
Instructions
- Add the marinara sauce and beef broth to a large saucepan over medium heat; cover the saucepan and bring to a simmer.
- Meanwhile, add the bison meat, panko bread crumbs, onion, garlic, egg, Worcestershire, oregano, lemon zest, salt, and black pepper and mix with your hands to combine.
- Roll the meat mixture into balls one-inch balls. Once all the balls are rolled, place them in the simmering sauce.
- Simmer undisturbed (don’t get excited) the bison meatballs for 20 minutes.
- Serve the meatballs over angel hair pasta with a shave or two of parmesan cheese.
