Tomato-Simmered Lemon & Oregano Bison Meatballs

Ingredients

  • 1 lb. Bitterroot Bison ground meat
  • ½ cup ricotta cheese
  • 2 TBSP parmesan cheese, grated
  • 1 cup panko bread crumbs
  • 1 small onion, grated
  • 3 cloves garlic, minced
  • 1 large egg
  • 2 TBSP dried oregano
  • 1 tsp lemon zest
  • 1 tsp kosher salt
  • Ground black pepper
  • 4 cups chunky marinara sauce
  • 1 cup beef broth
  • 2 tsp Worcestershire sauce

Instructions

  1. Add the marinara sauce and beef broth to a large saucepan over medium heat; cover the saucepan and bring to a simmer.
  2. Meanwhile, add the bison meat, panko bread crumbs, onion, garlic, egg, Worcestershire, oregano, lemon zest, salt, and black pepper and mix with your hands to combine.
  3. Roll the meat mixture into balls one-inch balls. Once all the balls are rolled, place them in the simmering sauce.
  4. Simmer undisturbed (don’t get excited) the bison meatballs for 20 minutes. 
  5. Serve the meatballs over angel hair pasta with a shave or two of parmesan cheese.
