In the Old West “I’m your huckleberry” was an idiom equivalent to saying “I’m your man” or “I’m the man for the job”. It meant you were game, that you were up for the challenge.

”I am your Huckleberry” was also the most famous movie line from the classic Western movie “Tombstone” (1993) delivered so flawlessly by the iconic actor Val Kilmer, as Doc Holliday.

The term “huckleberry” is also a literary term made famous by Mark Twain’s Huckleberry Finn character.

Huckleberry as a fruit remains an enigma to most people ‘till they move to Montana and find huckleberry coffee, huckleberry chocolate, huckleberry ice cream, huckleberry pie, huckleberry jam, huckleberry this, huckleberry that. Suffice it to say this fruit is a big deal around here because it’s a uniquely delicious berry that we are proud of significantly.
From the Ericaceae family, specific to the Pacific Northwest region of the United States, particularly in Montana, huckleberries look much like blueberries, round and much smaller in size, range in color from red to blue to black, have a subtle mildly sweet and tart flavor and are found only in the wild. They could also be “your r huckleberry” for cooking a fun summery, juicy, fruity pork tenderloin, because “that’s just their game.”

Pork tenderloin, from the pork loin, is as lean as skinless chicken breast, very tender, mild-tasting, and can take on any fun flavor or a combination of flavors you wish and perfectly display your culinary craft. In today’s cooking, we will be wrapping the pork with bacon, because we live in the United States of Bacon. Bacon, cooked strips from a pig’s underbelly, is delicious, addictive, and has been merited as the most likely food to convince vegetarians to eat meat.

Bring together the huckleberries, pork tenderloin, and bacon and you’d have Mountain Man, Radd’s original, creative, and exceptionally scrumptious Bacon-Wrapped Smoked Pork Tenderloin Stuffed with Huckleberries and Mangoes. If that bold flavor combo wasn’t wild enough, the entire dish is glazed with a spicy pomegranate molasses bbq sauce and smoked to impart a smoky flavor to our fruity sweet, tangy, savory, very tender with a satisfying bite of well-orchestrated flavor symphony in your mouth.

Bacon-wrapped Smoked Pork Tenderloin stuffed with Huckleberries and Mango

Ingredients
  

  • 1 cup huckleberries
  • 2 pork tenderloins
  • 1 lb peppered bacon
  • 1 cup mango diced
  • 1 TBSP brown sugar
  • 1 TBSP butter
  • Kosher salt to taste
  • Chili powder to taste
  • Headwaters BBQ Ringing Rock Rib Rub
  • 1 cup Stubb’s Spicy BBQ
  • 2 TBSP pomegranate molasses

Instructions
 

  • Melt butter and brown sugar in a saucepan
  • Add huckleberries and mango
  • Season with kosher salt and chili powder
  • Sauté until the berries start popping open
  • Remove from heat and cool
  • Butterfly open the pork tenderloins
  • Pour the huckleberry-mango mixture into the pork tenderloins
  • Refrigerate for 24 hours
  • Wrap the marinated pork tenderloins with a lattice of peppered bacon
  • Dust with Headwaters BBQ Ringing Rock Rib Rub
  • Heat smoker to 225°F
  • Place the bacon-wrapped pork tenderloins over a water bath and smoke until the internal temperature of 155°F. I used peach wood, but apple or pecan would be awesome as well.
  • Combine the Stubb’s Spicy BBQ sauce and pomegranate molasses
  • Glaze the meat with the pomegranate molasses BBQ sauce
  • Smoke until the glaze is good and caramelized
  • Slice, serve, and enjoy!
