Limitless is a kickass hot sauce condiment that, when coupled with smoking, takes any recipe from “just another drumstick recipe” to “wow!”

When it comes to hot sauce enthusiasts, there are two categories: occasional users vs hard-line devotees that have lapped up every brand and type of hot sauce they could get their hands on. These fans travel state to state to attend hot sauce awards and openings and sample the latest and the greatest. Their community has a distinct culture that’s just as laid back as the craft beer crowd, but with a much more naughty attitude mostly likely set in motion when the Tabasco hot sauce set off America’s hot sauce obsession way back in 1868.

Hot sauce is thousands of years old. The history of its inception may be murky, but archaeologists have evidence of humans using chili peppers in food as far back as 2,400 years ago. With Mexico producing an incredible 140 varieties of chili peppers for our globe, this widespread and notable human craving for heat and spice has made hot sauce one of the world’s most popular condiments, which luckily, is actually good for health and well-being. Hot sauce’s number one ingredient, chili peppers, contains more vitamin C than an orange and more vitamin A than carrots, and just a dash of it curbs appetite, reduces sugar cravings, and helps with weight management – a moving target most of us have been chasing.

And unlike Gainesville, Florida, where the law dictates people must eat fried chicken with their bare hands, here in Montana we don’t care how you eat your chicken. We do care how you eat your steak, but eating chicken is completely a personal preference prepared roasted, baked, grilled, sautéed, braised, fried, or smoked just as long as the meat is tender and flavorful, a task easily achieved with Montana’s own Head Water’s Poultry Rub and Arthur Wayne’s Hot Sauces.

Limitless Smoked Chicken Drumsticks

Ingredients
  

  • 8 chicken drumsticks
  • 2 TBSP Headwaters BBQ Pipestone Poultry Rub
  • 2 TBSP Arthur Wayne Limitless Hot Sauce
  • 1 cup apricot jelly melted

Instructions
 

  • Pat drumsticks dry with a paper towel and season generously with Headwaters BBQ Pipestone Poultry Rub.
  • When ready to cook, set the smoker temperature to 180℉ and preheat, lid closed for 15 minutes.
  • Arrange the chicken legs on the grill grate and smoke for 30 minutes.
  • Increase the grill temperature to 350ºF and cook for an additional 30 minutes.5
  • While the drumsticks are cooking, combine the Arthur Wayne Limitless Hot Sauce and jelly in a small saucepan. Bring to a simmer over medium heat then set aside until ready to use.
  • Brush the sauce on the chicken legs. Cook for an additional 10 minutes.
  • Time to enjoy the heat!
