Is there any way to improve the chili cheese dog?


You betcha, there is! First, start with a fiery bison beer chili (we know, your mouth is watering right now). Now, let’s improve that boring, gray, supermarket-special hot dog with a Chili Cheese Hot Dog from Pioneer Meats, a game changer in the hot dog game. Place it all together on a hearty baguette (no more sloppy, soggy buns). There we have an adult-style chili cheese dog.

Let’s talk chili

This spicy bison chili recipe features ground bison, instead of the usual ground beef, and a bottle of Bayern Brewing Face Plant Doppelbock Lager. Using ground bison results in a chili that is lower in fat and calories than those made with beef.

A famous legend has it that the all-American chili came out of Old West, where chuckwagon cooks on the range doctored up trail meats, like bison, with hot peppers for hungry cowboys after a long day of cow-punching (why punch cows?). Another (and more probable) origin story is that immigrants from Spain’s Canary Islands immigrated to San Antonio in the early 18th century, and they brought various stews recipes with them that evolved into all-American chili.

What no beans? Chili doesn’t have beans!

Chili purists blather on and on that beans don’t belong in authentic chili (for tradition’s sake. But chili is essentially a recipe of variety or necessity. If you like beans, add the freaking beans, or hell, even get wild and throw in some corn niblets or bacon bits.

Ingredients
  

  • 2 lbs ground bison
  • 1 large onion chopped
  • 3 cloves garlic pressed or minced
  • 3 chipotles
  • 1 poblano pepper diced
  • 1 15 oz. can of tomato puree
  • 1 15 oz. can of diced fire-roasted tomatoes
  • 1/2 cup chili powder
  • 1 TBSP ground cumin
  • 1 TBSP adobo sauce
  • 2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1 cup beef broth
  • 1 cup dark wheat ale Bayern Brewing Face Plant in our case

Instructions
 

  • Cook the ground bison in a Dutch oven over medium-high heat until browned and broken into small pieces.
  • Add the onions and sauté for 5 minutes. Add the garlic and poblano pepper and cook for an additional minute.
  • Add all remaining ingredients and bring to a simmer.
  • Reduce the heat to low and simmer for 1 hour, stirring occasionally.
  • And there you have it…Spicy Bison Beer Chili
