Spicy Grilled Watermelon

Aptly named, watermelon is 92% water and 8% sugar and is among the most refreshing, thirst-quenching, and fun fruits to eat. Try holding in a laugh when watermelon juice runs down your face.

Watermelon is the official state vegetable (you read that right) of Oklahoma. China is the world’s largest producer of watermelon, they even stir-fried, stewed, or pickle the rind. I would love to try them all. However, we Americans, eat the most watermelon in the world.

In several Mediterranean countries, watermelon is served with feta cheese, and in America, it is sometimes grilled. Because that’s what we do. When in doubt, grill baby grill.

Grilling watermelon intensifies its natural sweetness, adds a smokey flavor, and imparts a savory depth to this refreshing summer fruit. Enjoy our recipe.

Spicy Grilled Watermelon

Ingredients
  

  • 1/2 watermelon sliced into wedges
  • 1 TBSP olive oil
  • 2 TBSP Blind Beelzebub Rub
  • 1 lime sliced into wedges

Instructions
 

  • Crank your grill as high as it will go…we’re looking for at least 450ºF.
  • Brush the watermelon wedges with olive oil and place them directly in the hot grill.
  • Grill for 15 minutes and flip only once. We are looking for grill marks to develop.
  • Remove the watermelon from the grill and squeeze lime slices over the wedges.
  • Dust with the Blind Beelzebub Rub and get ready for culinary ecstasy.
